How Your Favorite Parmesan Cheese is Made

In producing parmesan, the milk is derived from cows that are allowed to feed on all-natural food. The milk is then stored overnight to allow for the natural formation of the cream to rise. The skimmed milk is combined with the morning milk and then heated up. Natural whey is added as a starter along with the rennet, which makes the milk curdle.


Once copper vat of the resulting curd will make two wheels of Parmigiano Reggiano. Once the two parts are separated, the creamy mass is then put into molds, which create the wheel shape of the cheese. A pin dot pattern of the words Parmigiano Reggiano is then repeated around the wheel, along with the production details of the cheese.


For a couple of days or more, the cheese wheels are left to rest before being immersed into a salt solution comprised of water and natural salt. The wheels are then repeatedly turned each day for 20 days.

After the wheels are removed from the salt solution, they are then left in a warehouse to mature, from a minimum of 12 months to 30 months or even longer.

The final seal – the consortium

Of course, before a wheel ever makes it into being properly identified as Parmigiano Reggiano and sold on the market, representatives from the dedicated Italian consortium of parmesan production inspect everything. Once the wheel passes all qualities with flying colors, the consortium will then give a seal of approval in the form of a Protected Designation of Origin, or PDO.

If a wheel is found to have even just a small defect, whether in structure, taste, and even sound, the seal will not be given and the name Parmigiano Reggiano will be stripped from it. The strict guidelines are there to protect against any shortcomings and provide premium quality, as will be expected by cheese lovers.
