4 slices bacon, chopped
1 large onion, chopped
1 green bell pepper, seeded and chopped
4 garlic cloves, chopped
2 tablespoons tomato paste
3 tablespoons chili powder
1 teaspoon fine sea salt
1 pound ground beef
1 medium head cauliflower, cut into florets then finely chopped
4 cups beef or chicken broth
1 medium tomato, diced
1 large avocado, pitted and diced
1 package Cheddar WhispsⓇ
- In a pot or Dutch oven over medium heat, cook bacon, stirring, until browned. Add onion and pepper and saute until softened, 6-8 minutes. Stir in garlic, tomato paste, chili powder, and salt and cook 1 minute more.
- Add beef and cook, stirring, until no longer pink, then stir in cauliflower, broth, and tomato. Bring to a boil then reduce heat, cover, and simmer gently until thick and aromatic, about 20 minutes. Taste and add more salt if needed.
- Serve chili topped with sour cream, avocado, and WhispsⓇ.
