Beanless Beef and Cauliflower Chili

4 slices bacon, chopped

1 large onion, chopped

1 green bell pepper, seeded and chopped

4 garlic cloves, chopped

2 tablespoons tomato paste

3 tablespoons chili powder

1 teaspoon fine sea salt

1 pound ground beef

1 medium head cauliflower, cut into florets then finely chopped

4 cups beef or chicken broth

1 medium tomato, diced

Sour cream

1 large avocado, pitted and diced

1 package Cheddar Whisps



  1. In a pot or Dutch oven over medium heat, cook bacon, stirring, until browned. Add onion and pepper and saute until softened, 6-8 minutes. Stir in garlic, tomato paste, chili powder, and salt and cook 1 minute more.
  2. Add beef and cook, stirring, until no longer pink, then stir in cauliflower, broth, and tomato. Bring to a boil then reduce heat, cover, and simmer gently until thick and aromatic, about 20 minutes. Taste and add more salt if needed.
  3. Serve chili topped with sour cream, avocado, and Whisps.
